We’re seeking a talented researcher for a 2-year postdoc position in Food Oral Perception, connected to two innovative Novo Nordisk Challenge projects: Proferment and Seedfood.
Research Focus:
- Investigating palatability of plant-based foods
- Studying mechanical properties of fermented seed foods
- Exploring mouthfeel properties of plant proteins
- Analyzing fungal mycelium growth and sensory texture perception
- Developing new approaches to reduce bitterness and astringency
